The “Golden Child” Pancake
They say imitation is the sincerest form of flattery, but let's be honest - there's always a little internal ick when something feels a bit too close to "copying." Still, isn't that how great ideas spread? When something is so good that it inspires others to create their own version.
That's exactly what happened with our sous chef, Chef Yari, after trying one unforgettable pancake at Middle Child, a James Beard Award-winning restaurant in Philadelphia.
She later discovered that Middle Child's famous pancake had, in turn, been inspired by another beloved breakfast destination: Golden Diner in New York City. A pancake so memorable that, as far as we know, it has made its way from kitchen to kitchen across the tri-state area, inspiring chefs along the way.
During an impromptu menu meeting, she jumped at the opportunity to whip up her own batch for me and Chef Chadd. She executed the most perfect pancake and topped it with juicy chunks of local, seasonal peaches. It was perfect.
Our version, naturally, has its own twist. A dash of orange zest and maybe a squeeze or two are mixed into the batter and the butter, which melts into the syrup. Yum. It's oversized and perfect for sharing, yet still, somehow, light and fluffy.
Now, our pancake - aptly named The Golden Child - has taken our breakfast menu by storm. On its very first day, we sold out three separate times. Maybe we underestimated just how curious everyone would be. Or maybe it's simply a really damn good pancake.
Either way, we're thrilled to welcome The Golden Child to our menu - a dish inspired by the great flapjacks that came before it, fully reimagined and fully slathered in butter. Cheers, Chef Yari!
